I need easy recipes for a single dad?

I need to learn to start cooking for me and my daughter (on my weekends) and would like some eay, nitritional ideas to start out with.

Beanie-weenies – can of beans and cut up hotdogs.

grilled cheese – butter one side of a piece of bread, put it butter side down in the pan, add one or two slices of Kraft cheese, butter another piece of bread, put it butter side up.

Pigs in a blanket – different variations.
1 – make frozen pancakes in the microwave. Make microwave sausage. wrap a pancake around a sausage.
2 – unroll a can of crescent rolls – separate the triangles and then cut each one into 2 triangles. cut hotdogs in half and wrap each hotdog piece in a triangle. the ends of the hotdogs will not be covered. look on the package for directions for baking – time and temp.

tuna ball. drain a can of tuna and empty it in a bowl. Add 1 package of lite cream cheese. mix well. add a few drops of Tabasco sauce and a couple shakes of seasoned salt. take a taste to make sure it’s not too hot for the kids. it probably won’t be and you may need to add a few more drops of Tabasco. Serve with any kind of wheat crackers for dipping.

always bring out the fresh veggies and lite veggie dip.

You’ll do fine. Just think about what you are giving your daughter.

    You can make mini pizzas-

    Buy some english muffins and halve them, put under grill til lightly toasted then spread with the sauce, cheese and whatever else you want. Put back under grill til melted and cooked through.

    Also I make a sauce to go along with any pasta – chop bacon, onion, carrot, broccolli etc sautee in pot, add a little flour and stir through. Then add about one cup of thickened cream and heat through. Serve with pasta

    Sorry sautee means brown and sorta let the vegetables cook through a little before adding flour and cream

    You could go to http://www.foodnetwork.com and choose from different categories. It will show you a recipe, how long it takes to make, and is rated easy, moderate, hard. http://www.bettycrocker.com is set up basically the same way. http://www.recipes.com is another good one. Winco foods has recipes at the bulk food bins that are easy. Barnes & Noble has a good selection of books. The other things I mentioned are FREE! Good Luck, happy cooking!

    get some fish put it in aluminum foil add any vegetables like brocolli carrots asparagus (any vegetables) squeeze lemon salt to taste pour in half cup of chicken stock wrap it up and bake it for 25 minutes at 200c. i usually eat it with steamed rice or plain noodles.

    Pasta is really easy, just buy some pasta from the bag and Prego red sause in the jar (can get some at costco pasta and sauce). then just boil some water and cook the pasta for how long it says on the back. (stir frequently so it does not stick to the bottom ) then taste it to make sure it is cooked enough (meaning soft) then dump into the strainer, then put it into a bowl, then put about a tablespoon of olive oil into it then stir. Then put the sauce in and stir. If you want you can put vegitables in. you should drain the juice to make sure the pasta doesn’t get watery

    O.K….you’re getting your answers from someone who has to cook for a picky eater (my boyfriend) and also wants to eat healthy…but is also new to cooking.

    For quick and healthy lunches, try:

    A stick of french bread, cut into half inch thick slices, top with a slice of salami or any other similar Italian cold cut that you like, add a tiny bit of sun dried tomato, or an ultra thin slice of fresh tomato on top, crumble a bit of feta cheese on top of this, sprinkle some oregano and drizzle with a bit of extra virgin olive oil. Bake on top rack of oven or use toaster oven at 350 degrees, making sure to watch it every minute or so ask it browns the bread and heats up the ingredients on top.

    Another lunch idea: Flaxseed bread or whole wheat bread, topped with a bed of baby spinach. Mix a can of tuna or salmon with some ranch dressing (add as much as you prefer, taste it as you add to see how much you like) then put the mixture on top of the spinach. Ta-Da! Easy but healthy sandwich.

    Another good sandwich idea: Same bread as above, topped with a bed of romaine lettuce, lots of deli sliced regular chicken breast meat (not smoked), with slices of avocado and slices of white onion, dab some mayonnaise on top and add your last slice of bread!

    Also, learn to make dishes in a slow cooker (crock pot). You can throw whatever veggies and meats you like and let it cook from morning til night time and you got a great meal that lasts for days! You can easily find easy crockpot recipes online. The only prepping you may have to do is wash, peel and slice stuff like potatoes and carrots, otherwise, its all just adding the ingredients in a slow cooker and letting it work its magic! Look up "slow cooker recipes" and "crockpot recipes" on http://www.google.com So you can now make soup, stews and much more!

    Another easy thing to make is pasta! Lasagna is good, so is spaghetti. Make sure you have enough pasta sauce (canned or jar) and ground beef, onions and garlic, and lots of cheese. All you have to do is brown your ground beef with onion then toss in the canned or jar sauce, put over hot pasta. The lasagna is similar but in a oven proof dish, and you can find easy recipes for those too at http://www.allrecipes.com and on the food network website as well.

    Since you’ll have all this ground beeF, you might as well make Shepherd’s pie! Boil and mash potatoes (2 big ones per person), brown your beef and onions, like you would for spaghetti, then add some canned peas, carrots and corn, the little bitty ones, layer it in something like the lasagna dish and put it in the oven to brown! Again, loads of easy recipes online, but those are the basics.

    With any leftover ground beef (providing you bought it cheap in bulk) you can hand form burger patties and BBQ them! Use the onions you used for the above recipes to top off your burger!

    Also can buy a taco kit at the grocery store and use the ground beef for tacos too…go shopping with your daughter ask her what kinds of toppings she’d like!

    You can also buy chicken breast in bulk, the real stuff, cube them and put them on skewers with bell peppers and red onion for kabobs, then BBQ then on the grill. You can also slice them thin into strips with red onion and bell peppers and broccoli or snap peas for a yummy stir fry with white rice. In the grocery stores, they will have a variety of stir fry sauce under the sauce aisle. Use Minute Rice for this.

    You can also throw together a salad so that you are getting all your veggies too. Use baby spinach leaves or romaine lettuce as regular iceberg lettuce has no nutritional value. Toss with an italian dressing, or simply use extra virgin olive oil and some white vinegar and oregano and toss with some chunks of tomato and cucumber and red onions.

    As a side dish, bagged frozen veggies are really helpful, the California Mix, with cauliflower, carrots and broccoli.

    Also for side dish, buy the miniature potatoes, no need to wash, skin on, boil til tender, drain and transfer to foiled cookie sheet. Drizzle with lots of extra virgin olive oil and season with your favourite POWDER chicken seasoning, YES, CHICKEN SEASONING!! Throw in the oven, watch often at 350 degrees til skin gets browned and wrinkly, then take out, eat when hot, they are delicious!

    With that extra chicken seasoning you could season any leftover chicken breast and put them on the BBQ.

    Don’t forget to buy Shake and Bake for chicken or pork chops. Literally just shake and bake.

    Hamburger Helper is not that nutritious, but easy, same as canned Chef Boyardee and Kraft Dinner mac n cheese.

    well, my dad makes chicken salads, with pre packaged lettuce, cut up chicken strips an dressing. tacos are always easy to make if you get a taco kit, and they are healthy if you add lettuce and tomatoes. you can find"meals in a box"like hambuger helper, or campbells dinner bakes, Frozen Dinners, barbeque, hmmm, grilled cheese, soup, wraps, mixed veggies

    I guess it’s all in what you girl will eat I have a son who won’t eat anything but bread and chicken.. a girl who won’t eat anything green and my oldest son will eat anything!

    But here are a few tips. Squash Fries

    pile then slice your squash to pieces so that they look like fries. then dip them into a egg wash (one egg beaten with fork then add about one tablespoon of milk.) Then place into a flour mixture of 1/2cup flour salt and pepper 1teaspoon each then place on greased(spray down with cooking spray) cookie sheet and bake at 375 until lightly browned.

    You can also make pork chop easy just sprinkle each chop with salt, pepper, and stake or grill seasoning then fry over med. heat in veggie oil.(you won’t need much only a tablespoon or two) or you can bake them with your "fries" That is how I do it.

    Oh and also a easy way to get you kids to eat a salad.. add one chopped apple to it! And lightly dress it with your dressing. You can also try orange slices from the can, but they didn’t go over as well as the apples

    Can you scrounge up a crock pot? (a mom or aunt might have one in the attic) Crock pots only dirty one dish and you can make something edible and healthy without looking after it for hours so you can spend quality time with the munchkin. Beef stew meat, carrots, celery, onion and potatoes mixed with a packet of low sodium beef gravy mix and some water makes a tasty and healthy beef stew. You can also cook chicken legs with a squeezed fresh lemon and Italian seasoning in a bit of water for simple lemon chicken. Pork chops or smoked sausage cooked with 2 cans of rinsed sauerkraut makes a good homestyle meal in the crock pot as well. The basic formula is: inexpensive meat+vegetables+cooking liquid (water or broth)+seasoning=dinner!

    Qucik, Healthy bean salsa enchiladas

    1 can of baked black beans
    1/2 cup medium/mild salsa
    Low fat corn tortillas
    2 tbsp chopped onions (optional)
    low fat american/cheddar cheese slices

    In a bowl, mix beans, salsa and onions. Microwave for 1 minute. Now fill the tortilla with 4-5 tbsp of this mixture. Add a cheese slice. then fold the tortilla and press gently so that it stays folded. Now add another cheese slice on top of the tortilla (at the fold). Top with 2-3 tbsp of salsa. Microwave for 1 minute and serve!

    I call this recipe "The New Bride’s Best Friend" because it was one of the first meals I learned to cook. If you know how to wield a knife and know where the stove is, you can make this one pot meal. You could even make it a fun project for you and your daughter to do together. You get the roast going, and then prepare all of your vegetables.* Set them aside until it is time to add them. Have fun!

    STOVE TOP POT ROAST

    Flour
    1 2-1/2 to 3 lb. rump roast
    4 or 5 Tbs. oil
    1 medium yellow onion, chopped small
    3 cloves garlic, chopped (A clove is one of the smaller pieces that breaks off from the garlic bulb)
    1 48 oz. can beef broth plus 48 oz. water
    1 tsp. Kitchen Bouquet
    3 celery stalks, chopped
    8 10 oz. Portobello mushrooms, diced
    10 oz. whole baby carrots
    4 medium red potatoes, cut into cubes
    1 10 oz. package frozen peas OR 1 can peas

    Place some flour in a large brown paper bag. Put the roast in the bag with the flour and shake. (This will coat the roast with the flour.) Now put the oil in the bottom of a large, heavy pot on high heat. When sufficiently hot, turn heat down to meduim-high. Add the roast and brown on all sides, turning occasionally. When meat is sufficiently browned all over, stir in the chopped onions and garlic. Cook until the onions are browned and translucent, stirring occasionally so as not to burn. Lower the heat. Add the broth, and an equal amount of water. Add the Kitchen Bouquet. Allow the roast to simmer over low heat, covered, for 2-1/2 hours. At the end of 2-1/2 hours, add the celery, carrots, mushrooms and potatoes. Do not add peas. Continue simmering until the meat is tender and comes apart easily. Test both potatoes and carrots for doneness (soft, but not mushy) as well Just before removing the roast from the pan, cook the peas in a separate pan. Heat through for 4 or 5 minutes. Remove roast to a platter. Remove the vegetables from the pan with a slotted spoon. Surround the roast with all the vegetables except the peas. If the gravy left in the pan needs thickening, use a wire whisk to mix a little flour and water together (do not make the flour mixture thick.) Add the mixture to the broth and whisk with the gravy to blend it together. (If the gravy is too thick, thin with a little water, whisking to blend.) Pour gravy into a small bowl or gravy boat. Serve with the peas on the side.

    *If you peel the potatoes ahead of time, be sure to place them in a bowl of cold water so that they do not turn brown. When you are ready to add them to the roast discard the water.

    There is one rule in cooking and that is to first read through each recipe. Then have all your equipment out and ingredients ready before you start cooking.

    Grilled Cheese Sandwich with Tomato Soup. Do you know how to make the sandwiches? I spread a little mayonnaise on one side of the bread, place a couple of pieces of cheese on one of the sides with mayo. Put together. Butter the outside top, place it buttered side down in a hot skillet and cook until it is golden. Butter the other side, flip it over and brown that side (the second side will brown faster than the first.) For the tomato soup you can use your favorite canned soup (like Campbell’s). When the soup is hot, sprinkle some shredded cheddar cheese in the center and serve. To make the sandwich "healthier" you can add some lettuce after it’s cooked and a slice of tomato.

    You could purchase a package of those refrigerator crescent rolls (the kind you pop on the counter and they split open). Buy some Kosher hot dogs – preferably beef – like Hebrew National (they don’t use the innards in their hot dogs). Take one of the hot dogs and cut it into thirds. Roll one of the crescent triangles around it so the hot dog sticks out of each end. Bake it according to the package directions. Children generally love those.

    Serve a salad whenever you can. Some children just like lettuce and tomatoes and most love Ranch salad dressing – preferably Hidden Valley (that’s the brand most of them prefer). Find out what kind of veggies she likes in her salad and add them.

    You could fix scrambled eggs for breakfast with a little ham and cheese in it. Served with a piece of toast. Most seem to prefer white bread but see if you can get away with a mild whole wheat.

    You could serve hamburgers for dinner – buy lean ground beef. Some children like chicken sandwiches for lunch. My granddaughter loves sliced chicken on bread spread with mayonnaise, a slice of tomato and a leaf of lettuce.

    INGREDIENTS
    2 (8 ounce) packages refrigerated crescent rolls
    1 (1 ounce) package ranch dressing mix
    1 cup mayonnaise
    1 cup sour cream
    1 (8 ounce) package cream cheese
    any veggies or meat you like

    DIRECTIONS
    Preheat oven to 375 degrees F (190 degrees C).
    Roll out crescent rolls onto large non-stick baking sheet. Stretch and flatten to form rectangular shape on sheet. Bake 12 minutes, or until golden brown. Allow to cool.
    In medium size mixing bowl, mix ranch dressing mix, mayonnaise, sour cream, and cream cheese until well blended. Spread the mixture over the cooled crust. Arrange vegetables over the top of the crust. Refrigerate for 1 hour

    this is great tooo… kids love it and it has everything they need, plus you will have enough for you the next day… serve with a salad and garlic bread..yum….

    good luck…. remember all the kids need is you! maybe have them help you in the kitchen… you all can learn together! it would be fun plus they would enjoy eating what they helped dad make!

    Spaghetti Pie

    Ingredients

    3 tablespoons butter, softened
    1 pound spaghetti
    salt, for pasta
    12 eggs, lightly beaten
    1 ½ cups grated parmesan cheese
    ¼ cup extra virgin olive oil
    1 garlic clove, very finely minced
    ½ cup Italian parsley, chopped
    salt and freshly ground pepper, to taste
    1 cup mozzarella cheese, shredded

    Equipment

    9” x 12” baking dish, preferably glass€

    Preparation

    Lightly grease the inside of a 9” x 12” baking dish with the butter. Preheat the oven to 350° F.

    Prepare the spaghetti according to the package directions and undercook by 2 or 3 minutes. It should be very al dente. Drain and rinse with cool water. Set aside.

    Beat the eggs lightly to combine. Stir in the grated parmesan cheese, extra virgin olive oil, finely minced garlic, parsley, salt and pepper.

    [Chef’s Note: Be sure not to add too much salt as the cheese has plenty of salt already.]

    Add the egg mixture to the spaghetti and mix until all the spaghetti is well blended with the eggs. Pour into the buttered baking dish and spread the spaghetti mixture evenly in the pan. Cover with foil and bake for 40 minutes or until the eggs are completely set. Uncover the spaghetti pie and sprinkle the shredded mozzarella cheese over the top and bake, uncovered, for another 5 minutes or until the mozzarella is melted and slightly browned. Remove from the oven and cool.

    Service

    Spaghetti pie is best served at room temperature. It can be kept in the refrigerator for up to 3 days. If longer storage is required, it can be wrapped in plastic wrap and then in foil and placed in the freezer for up to a month. Thaw and bring back to room temperature before serving.

    Variations

    Spaghetti pie is one of those delightful recipes that can be creatively adapted to individual tastes. Feel free to add your own special ingredients such as pepperoni, prosciutto, maple ham, sun dried tomatoes, blanched vegetables or other types of grated cheese. You can also substitute whole wheat or spinach spaghetti, or even linguine or fettucine.

    Kids love this one and it’s all in one pot!
    Heat oven to 350 degrees F. (Moderate oven)
    Use a large (6 to 8 quart) casserole with a cover that can be heated on the range top (cooker) and used in the oven.
    Brown 1 pound minced (ground) meat with 1/2 yellow onion, chopped. Season to taste with salt, pepper, and Worcester sauce.
    Add 12 oz. short curly dry pasta, stir to combine. Add one can peeled tomatoes with the juice. Top up with water to cover the noodles.
    Bake 1 hour or until the noodles are al dente.
    Garnish with chopped fresh parsley, basil, or cilantro.

    - put t in a freezer for 20 min
    - than make a dozen of cookies put them on a cookie sheet
    - to the oven on a medium fire, in the upper lever of the oven
    - leave to bake for 10 min (for big cookies_ or 8 min (for small cookies)

    There are a lot of books written on single men or women and there kids.One book is called"make a meal in five minutes" you can also look at the Jane Brody cookbook which does a lot with nutrition. The American Heart Association is a great reference and over substitutes. I have used these books for years when I was a teacher instructor at a top culinary school.
    Get books on vegetables, legumes (beans)

    A good one I make is a vegetarian stew and then I had lentils to thicken and it gets more protein.The only catch is saute each vegetable separately in small amount of oil, remove and do next veg. Once they are all cooked to there doneness, you can now mix it up all together in a pot and add some vegetarian stock, tomatoespepperes,squash,turnips,rutabega,celert,mushrooms,
    There is no end in what you can do. experiment using some of my guidelines and you will be pleased
